Easy Peasy Creamy Chicken Burrittos

So- I love these... I think they're nummy and so simple to use and I only use them for one meal (which is super hard since they, like I said, are so easy to use)

So basic ingredients are:

Chicken breast- grilled strips 
1/4 c to 1/2 c Sour Cream
1/4 c to 1 c Cheddar Cheese- grated
2 tsp(ish) of Chili Arlic Sauce- not paste!
Italian Seasonings
Meat Tenderizer salt
and any other spice that tickles your fancy
Tortillas
Avocado
Tomatoes
Lettuce

Throw the chicken strips (they're frozen and they cook down just fine) and thaw them out, cooking them down.  Add the Chili sauce,  and seasonings and mix together- causing a nice nummy smell.  Cook together.  When the chicken is thoroughly cooked down, add sour cream and mix together.  Top with melted cheese, remove from heat and cover.

Warm up tortillas (or cook 'em up... we get the uncooked variety and they. are. amazing.)  Smooch down some avocado, add a little bit of salt to enhance the nummy avocado flavor. Dish up some of the chicken stuffs and put on avocado.  Top with tomatoes, lettuce, and salsa of your choice- again we really enjoy Pace Medium.  Wrap and enjoy! 

Seriously- so easy and such but so nummy. :-)

It's Been A While

So- I know that I've been slacking on posting the foods that we make- but I haven't really been cooking much- I don't like it when life gets away from me and when I stress about money- I often times just wanna spend it. 

NO BUENO!

So- my goal for this next week is to cook dinners... EVERY. DAY.

And I'm gonna try to post something new at least twice this week...

K. It's down on "paper"... now I hafta do it... right?

Hearty Taco Soup

We made nummy taco soup for dinner tonight and had friends over to enjoy- figured we'd post the recipe since it was so good!

One big can of Stewed Tomatoes, with the tomatoes diced
(or 2 smaller cans of diced)
1 can pinto beans
1 can black beans *rinsed*
1/2 bag (smaller) of frozen corn
2 chicken breast halves
1 stalk green onion diced
hot taco sauce

**(to taste)**
cumin
minced garlic
dry mustard
celery salt
meat tenderizer/ season salt
garlic salt
ketchup (slight- very slight amounts)
lime juice

Throw all canned ingredients and the "to taste" ingredients together- before adding the chicken breast.  Do just before "enough" and add chicken halves and corn

Let the crock pot do the work and put it on high for 3 hours.  Check the chicken.  When chicken is done, pull from crock pot and shred, replacing chicken after shredding.  

{taste again}

Add more ingredients- mainly garlic salt and cumin.  Just to taste.  Let cook for another hour to blend in the other tastes beautifully.  

Serve with cheese, sour cream, and quesedillas with dipping sauces.
Enjoy!  This stuff is filling!  So you {could} just enjoy it by itself!

Fried Broccoli

We like broccoli in our home... 

However- steamed to the point of mushy broccoli- not so much...

So, we steam it (sometimes) but mostly, I fry it up... And it goes well with Cheesy Chicken or any other delicious item you wish to make.

1 bunch of Broccoli, cut down to bite sizeable pieces.. 
I <3 the stem, Husband- not so much
some Soy Sauce
some Red Pepper flakes
1/4 c to 1/2 c freshly shredded Parmesan or Romano cheese  


In a frying pan, heat some olive oil and add broccoli and kinda move it around so that the oil just doesn't absorb into a few pieces, but that the heat gets to all of the broccoli. 

Add soy sauce- I say roughly 2 TBS or so.  Just enough to give the broccoli pieces 
(not all, but some) some color.  
Keep frying, stirring frequently until the green from the broccoli darkens. 

Remove from heat and top with Parmesan or Romano cheeses.  Stir together and then top again.

add Red Pepper flakes, again, depending on the heat that you want. 

Serve and enjoy the simple easy relatively healthy dish as a vegetable side.

Pumpkin Cookies

Pumpkin cookies- yummy

Price of store bought, often stale and cold pumpkin cookies- not so yummy

Easy peasey-low-fat Pumpkin cookies to the rescue!

1 15 oz can of pumpkin puree
1 box of Spice Cake Mix
1/2 bag of chocolate chips

Mix pumpkin puree with the spice cake mix until it is a nice sticky consistency.  Once all the powdery mixture is all wet, add chocolate chips
Dollop into tablespoon size drops onto a greased cookie sheet.  
Bake for 8-10 minutes at 350'

Enjoy these deliciously easy and aroma filling cookies!

Slight hint though...
 These are hugely popular at pot-lucks and since they're so easy and low fat, who wouldn't want a LOT of them?  My suggestion- use the big can of pumpkin (29 oz), 2 bags of Spice Cake Mix and a whole bag of  chocolate chips.

But don't take my word for it.

Mexican Pasta Shells

This is a recipe that Husband's mother made... we just kinda made it our own...

Mexican Pasta Shells

1 lb lean ground beef
1/2 can of black re-fried beans
1/2 block of fat-free cream cheese
2 c  low fat shredded cheese
1 small can of tomato sauce
(I like the big one, but I like sauce. )
Salsa 
(any kind- we used Medium Pace)
taco seasonings that you enjoy-
(we used a little bit of cumin, season all salt, celery salt, salt, red pepper flakes, tiny amounts of all spice, dried mustard)
1/2 small yellow onion- minced tiny tiny tiny or, if you're like me, pretty much mulched
2 tsp.(ish) minced garlic
1/2 box of Pasta Jumbo Shells
handful of crushed tortilla chips

Brown the beef with the minced garlic and onion.  Add your taco seasonings so that the meat has a taco-flavor to it.  Add a little bit of tomato sauce- until the meat is reddish.  Add re-fried black beans.  Mix together.  Add cream cheese- mix together.  Add a little bit of salsa, more tomato sauce.
Cook until "sticky".

As you cook the meat, be sure to have the noodles boiling.  <DO NOT OVER BOIL>.  Only boil until they are mostly done.  Rinse off in cool water so that you can actually touch noodles. 

When the taco filling is done, use spoon and spoon in 
(we used a medium spoon and filled them full- not stuffed and just had the right amount) 
 Place all filled shells in a 9x9 casserole dish.  Squish all filled noodles in. 

With the remaining tomato sauce, add more salsa to it- until it is as hot or as tomato-y as you like.  We liked it spicier-   Pour over noodles-  Sprinkle cheese on top.  Then add crushed tortilla chips on top.  If you wish to have more sauce, you can always open up another can and make it more soupy..

Don't forget to bake it in the oven at 350' until the cheese is all melty and gooey... 

serves well with cottage cheese, salad, or corn... or all 3 if you're feeling ambitious.
